Bún chân giò

Bún chân giò (“pig’s trotters vermicelli”), sometimes called “bún chân giò dọc mùng” for it’s always cooked with “dọc mùng” (taro trunk). The ingredients are marinated pig trotters, raw pig ribs, and taro trunks. It’s served in a broth made from stewed pig bones, tomatoes and other herbs.
