I love this place.
I've been going here for several years and though I don't go that often and sometimes I don't visit for months at a stretch, the cheerful lady who runs this establishment always recognizes me and greets me.
The setting is eccentric. The sign outside says "office supplies," but inside it appears to be a tailor's workshop outside of bun cha hours. There's one of those big hardwood bed things, usually adorned by an old man paying no mind. The blue plastic stools and tables nestle among scraps of fabric and other knick knacks.
They bring you a massive dish of assorted herbs and salad. I like that they don't skimp on this as I'm a fiend for the lemon leaf-y one and don't like to run out. The meat is good; the patties are wrapped in leaves. The sauce is warm. The nem are the smaller variety but still perfect for soaking in your sauce.
I've said before that bun cha in and of itself is deserving of 5 stars, but I don't think I've ever given a place 5 stars. Bun Cha 34 Hang Than gets the full quota because it realizes that potential by putting in that extra effort. The setting, the people, the food - this place is a microcosm of the possibility of Hanoi.
