Bún cá Hà Nội (Hanoi fish noodles) is a popular dish in Hanoi. The name includes Hanoi to separate it from other provinces’ fish noodles recipes. It was originally made in winter, when water dropwort was in season. The ingredients are crispy mullet and water dropwort fried with tomatoes. It is served in a bowl after being steep in soup made from boiled mullet’s bones and other vegetables.
