Phở is a traditional Vietnamese noodle soup, while phở bò Nam Định (Nam Dinh beef noodles) is considered a unique variation on this dish from Nam Dinh, Vietnam. It’s made from fresh chopped beef, noodles, green onions and, vegetables and a broth which is made from stewed bones and fish sauce. The presence of the fish sauce and the sue of rare beef are indicative of the Nam Dinh variety of phở. It is often served with lime and chili. Quẩy (fried bread stick) are usually available upon request.
