Mì tim (pig heart noodles) is a relatively recent innovation using instant noodles and has quickly become popular in Hanoi. It’s simply made from instant noodles, pork heart and other vegetables, especially Brassica rapa, served in broth. The broth is made from stewed pork bones and other ingredients. Sometimes instant noodle seasoning is added to moderate the flavor of the pork heart and to make the broth saltier. The texture of the pork heart and salinity of the broth make this dish a little bit different from other noodles soups on offer.
